The coffee here is optional, but why not use it if you already have leftover coffee from this morning? You can also add instant coffee to the cocoa mix or make a quick cup and use it. The flavor of the cocoa and coffee together is unique.

Quick No-egg Cake

Ingredients

  • 1 cup (128 g) granulated sugar

  • 1/4 cup (32 g) unsweetened cocoa powder

  • 1 tsp baking soda

  • 1 1/2 cups (192 g) all- purpose flour

  • 1 tbsp white vinegar

  • 1 1/2 tsp vanilla extract

  • 7 tbsp vegetable oil

  • 1 cup (240 ml) water or coffee

  • pecans, chocolate chips, or toffee pieces, for topping (optional)

Directions

  • To start, preheat the oven to 350 F (180 C).
  • Sift together the sugar, cocoa powder, baking soda and flour in a large bowl.
  • Create a well in the center of the mixture and add the vinegar and oil. Pour in the water or coffee. Mix until well combined.
  • Prepare a lightly greased 8 x 8 inch (20 x 20 cm) pan and pour the batter mixture. You can add any toppings if desired.
  • Bake for 40 min. Remove from the oven and transfer to a wire rack to cool.
