Spicy Vegetable Combo


  • 1 tbsp olive oil

  • 1/2 onion, chopped (or onion powder)

  • 3 garlic cloves, minced (or garlic powder)

  • kernels from 2 ears of corn

  • 1 zucchini, diced

  • 1 yellow squash, diced

  • 1 bell pepper, chopped

  • 2 tbsp chili powder

  • salt and pepper

  • 1 cup (128 g) spinach, chopped


  • Place a large skillet or frying pan over medium heat. Heat the olive oil.
  • Saute the onions for 2 min, then stir in the garlic and saute for another min.
  • Stir in the corn, zucchini, yellow squash, and bell pepper.
