2 – 3 small eggplants 2 – 3 lb (900 – 1350 g)
olive oil as needed
1 jar 24 oz (600 g) marinara sauce, or 5 cups (640 g) homemade spaghetti meat sauce
1 cup (128 g) grated Parmesan cheese
1 – 2 tbsp Italian seasoning
- To start, preheat the oven to 375 F (190 C).
- Prepare the eggplants and cut it into 1/2 inch thick slices.
- Brush the eggplants with olive oil and dust it with Italian seasoning.
- Get a large baking dish, spoon the marinara sauce into the bottom of the dish, and arrange the eggplant slices on top.
- Top each slice of eggplant with marinara sauce and sprinkle them with cheese.
- Cover and put in the oven and bake for 20 min, or until the eggplant is soft, and cheese is golden brown.
- Serve warm.
