Most pasta sauces use Parmesan cheese, but you can switch it to another cheese too. Some good types of cheese include mozzarella, goat cheese, or ricotta, which all add different flavors and textures.

Baking the eggplant is essential for the sauce to gain the taste it needs, but you can add more seasoning if you feel adventurous. Great options include basil, thyme, oregano, Italian seasoning, and garlic.

Don’t forget to serve this tasty marinara with a good bowl of pasta. We recommend rotini, parpadelle, manicotti, or rigatoni. Though, in all honesty, you can use any kind of pasta you have handy.
