Last-Minute Chicken Tostadas

Course: Dinner

Ingredients

  • 4 flour tortillas (5 inch or approx. 13 cm each)

  • vegetable oil for coating tortillas

  • 1 can 15.5 oz (approx 390 g) re-fried beans

  • 1 can 15.5 oz (approx 390 g) chicken breast

  • shredded cheddar cheese

  • 1 can 2.25 oz (approx 56 g) black olives, drained, sliced

  • lettuce or sprouts

  • salsa for serving

Directions

  • To start, preheat the oven to 375 F (190 C).
  • Prepare the tortillas by brushing both sides with oil. Place on the baking sheet, and bake for 5 to 8 min until golden brown.
  • Remove the tortillas from the oven and let them cool.
  • You can now top each tortilla with re-fried beans, chicken, olives, and cheese. Return to oven and let it cook for another 5 min.
  • Remove from the oven and top with some lettuce or sprouts.
  • Best served with salsa.
