This quick dinner is satisfying and very easy to make with just about anything you have in your kitchen.
Last-Minute Chicken Tostadas Are Quick to Make and Very Satisfying
To begin, let’s cover the filling of your tostadas!
While this recipe calls for chicken, you can use almost any meat you have handy. Use the leftover rotisserie chicken, roasted pork, or that ground turkey in the fridge.
All you need to ensure is that the meat is cooked and drained of any juices. Season it with pepper, salt, and taco mix or chili powder if you have it.
As for the beans and cheese, these are a key part of your chicken tostada. You don’t have to use re-fried beans, as pinto, black, or navy beans work just as well.
Drain them, warm them up a little, and then mash. The result will be a replacement for refried beans that are just as tasty.
The cheese, on the other hand, is what brings all ingredients together.
This recipe includes cheddar cheese, but you can use American, Colby Jack, or a Mexican mix. In a pinch, even canned cheese works.
Finally, let’s discuss the veggies and seasoning for your dish
While many people have canned olives at home, these aren’t entirely necessary. Replace them with green peas, canned tomatoes, or mushrooms.
The lettuce or sprouts add crunch to the tostadas, but if there aren’t any fresh ingredients for you to use, go with white or yellow corn.
Finally, the salsa is used at the end, but you can use your canned tomatoes and mix them with some spices.
Cumin, chili powder, paprika, lemon juice, and dried cilantro are all great here.
It’s more difficult to replace the tortillas, but corn tortillas are also delicious with this recipe. Or add more lettuce for a bowl dish instead.
All of this will take little effort, so you can enjoy yummy last-minute chicken tostadas any night this week!
