Try This Fun Chicken Tortillas Recipe Without Spending a Dime
Meaty Tortillas!
While this recipe calls for canned chicken, you can use any leftovers you have. A good substitute is ground beef, but any meat could work.
If, for example, you only have turkey or ham, shred into large horizontal pieces. Even leftover fish can work, but make sure to drain the water, and shred it too.
Now, for better flavor, you can try cooking the meat in any leftover stock or broth you have. This part can make your meat even tastier.
Onto the filling!
We mention shredded Cheddar cheese in this recipe, but if you have other kinds, it can work too.
Using other cheeses like American, or even Italian or Mexican blends will make your quesadilla melty and delicious. However, if you’re not sure about flavor, change up the seasoning.
As for the rest of the filling, if you have refried beans, this is their time to shine. Yet, not many do, so consider using black beans, or pinto beans. Simply mash them up well after draining.
The lettuce here seems to be key, but can be swapped with other veggies in a pinch. Use spinach, mushrooms, onions, or green bell peppers.
If you don’t have a way to make salsa, you can use diced tomatoes, by simply draining some liquid and seasoning well.
We recommend you use chili powder, cumin, paprika, dried cilantro, pepper, and salt. Really, any seasoning you like and find can be appropriate. Now, it’s time to cook! Fry the quesadilla on the stove but feel comfortable using a toaster oven as well if you prefer.

1 can 16 oz (400 g) refried beans
dash of chili powder
4 to 5 flour tortillas
1 can 12.5 oz (approx 112 g) chunk chicken, drained
shredded lettuce or sprouts
1 cup (240 ml) prepared salsa
shredded sharp cheddar cheese (optional)
Recipe variation: you can use 1 cup (128 g) ground beef crumbles, instead of chicken
Directions
- In a small pot, heat refried beans with chili powder over low heat. Then on a skillet, heat the tortillas for 30 seconds on each side.
- Spread the refried beans on the warm tortillas.
- Then top each tortilla with chunk chicken, followed by lettuce or sprouts, salsa and then cheese if desired.
